Labneh and Hot Za’atar Stuffed Baked Potatoes
Preheat the oven to 200°C. Scrub unpeeled medium-sized potatoes to clean them very well. Dry the potatoes and bake them in the oven for 50 minutes or until fork tender.
Let them cool for 10 minutes, then cut them open and season the inside with salt. Stuff each potato with Labneh, sprinkle with Hot Za’atar, chopped scallions, drizzle with a bit of extra virgin olive oil, and garnish with mint leaves.
